In 2006 he had the opportunity to learn much more about processes, quality, and varieties; managing to focus his farm and several producers in the zone on producing specialty coffees, but he had a problem in common with the other coffee growers, they did not have the capacity to produce large quantities, because they did not have a central processing center for quality processes. That is why in 2016 he began with his family to create a coffee processing center that became a strategic bridge between more than 15 villages in Gaitania and processing the coffees of coffee growers throughout the area. That’s how the Black Condor Project began to build and develop the drying stations to receive the coffee and process all together to ensure 2 things: quality and consistency. On May 22, Pedro Isaías González passed away in a vehicle accident while transporting coffee. There, we met Cristiene, her sister Kátia, their mother Dona Aparecida, and their sister-in-law Edlaine at their family farm, Sítio Pico do Boné.

The farm immediately made an impression on us. This beautiful 15-hectare property is lush, abundant, and truly feels like an oasis. We were welcomed with fruit grown right on their land—passion fruit, bananas, enormous avocados, loquats, and citrus—and spent the day learning about the family, their farm, and their vision for the future.

Coffee runs four generations deep in the Aparecida family. Cristiene’s parents, Abraão da Silva and Dona Aparecida Martins, were the first generation to move from sharecropping to land ownership. As Cristiene told us, it took many years of sacrifice, but her family was determined.

Abraão would load his ox cart and make the two-hour round trip to the family’s farm, carrying roughly 100 coffee plants at a time. Dona Aparecida remembers that he sometimes made as many as five trips in one day. Together, the family planted 12,000 coffee trees this way. Today, the farm has around 40,000 trees.

You can feel that history throughout Sítio Pico do Boné—the passion, love, sweat, blood, and tears that have gone into building this farm. The coffee plants thrive from it.

Abraão passed away in 2016, but his legacy continues through his daughters, Kátia and Cristiene, who have chosen to pursue specialty coffee and work toward exporting their coffees for higher premiums. This coffee is a result of their skill, knowledge, and hard work, while also representing the next chapter of the family’s story.

Cristiene brings a particularly important dimension to that work. After receiving feedback from his colleagues at the SCA Expo in Seattle in 2015, José returned to Colombia and began studying coffee and applied some of the conversations he had in Seattle about pH, Brix and temperature control. Along with the help of his father, a food scientist, they began working on the basics: Cleanliness, manual selection of ripe cherry, even and controlled drying (slow and shade essential to José’s process) and we are now happy to see his innovations bring us this delicate, floral, vibrant Gesha which has been 10 years worth of selection.

The Process:

Day 1: Delicate Gesha coffee cherries get hand-picked at the peak of ripeness at Finca Las Marias, high up on a North Face of the Western side of the East Andes outside of Pijao, Quindío, Colombia, then transported to La Clarita Lab & Drying Station Southeast of El Éden, Qunidío.

Day 2: The coffee cherrries are then placed in open tanks to ferment in a 12˚C refrigerated room for 24 hrs.

Day 3: The Cherries are pulped and rinsed and put back into the refrigerated storage room in open tanks for another 24 hours.

Day 4: The pulped coffee is washed, drained, and laid out to dry in three-tier raised beds.

Days 5 - Leon got to cup with them when he got to visit back in November of 2024 and this lot stood our to him on the cupping table. These conditions make drying the coffee—particularly for natural processing or the carbonic maceration methods —extremely difficult.

Adding to these challenges is the tiny size of the beans, which are approximately one-quarter the size of Arabica beans.
